The very first batch was made under a full moon. Un-pasteurized and gently heat-treated. Some batches are aged 3 to 6 months; others over 6 months. Buttery, natural, slightly sharp with a satisfying aftertaste. Small batches vary by season and climate. Some taste like Utah's sun-drenched summers, others hint of cooler months. Shipped UPS in an insulated box with frozen gel packs. Standard order is 1 lb.
